The perfect 2007 Chateauneuf du Pape Vieilles Vignes (tasted on four separate occasions) is composed of 85% Grenache, 10% Syrah, and the rest Mourvedre and other authorized varietals from 60- to 100+-year-old vines. The wine is aged in both tank (75%) and small oak barrels (25%). Its inky/purple color is followed by a phenomenal nose of spring flowers, creme de cassis, blackberries, boysenberries, licorice, truffles, and spice. Displaying massive body, incredible freshness, laser-like focus from the excellent acids, and a finish that goes on well past a minute, this prodigious Chateauneuf du Pape is the most extraordinary wine yet made at this estate.

A bigger, richer, more concentrated wine than the ethereally textured Cuvee Chaupin, the 2007 Chateauneuf du Pape Cuvée Vieilles Vignes is unquestionably one of the wines of the vintage as well as one of the finest Chateauneuf du Papes ever made. Offering notes of cassis, roasted meats, beef blood and licorice, this heavenly 2007 is full-bodied, hugely concentrated and rich yet shows incredible purity, focus and precision, with no sensation of heaviness or weight. It’s still deep purple colored, with no signs of evolution, and it has another two decades of life. Having said that, it’s a gorgeous drink today.

The finest wine I’ve ever tasted from the Sabon’s (although the 2010 gives it a run for its money), the 2007 Chateauneuf du Pape Vieilles Vignes is a flawless example of what this estate is capable of in a great year. Full-bodied, decadent and layered, with incredible purity and freshness, it boasts heavenly notes of blackberry, chocolate, licorice, red wine marinade and roasted meat. It’s a monumental wine that offers a singular, yet hedonistic drinking experience that should not be missed.
